Jirisan Agricultural Village - Hadong Wild Green Tea

Hadong, Gyeongsangnam-do, is the 111th designated slow city in the world and is renowned for producing green tea. Nestled where Jirisan Mountain meets Seomjingang River, the region experiences foggy and humid conditions, with significant temperature variations between day and night during the tea production period. The soil is weakly acidic, with sufficient moisture, creating an optimal environment for tea tree growth in gravel-rich soil.

As the first green tea cultivation site in Korea, the green tea cultivation area in Hadong-gun spans 1042 hectares of fields in Hwagae and Akyang-myeon. The field's shape is often peculiar, featuring a maze-like pattern on the slope of a deep valley. This distinctive layout is a result of the tea field forming naturally over time, harmonizing with rocks and large trees such as bamboo, chestnut, and plum.

Hadong's green tea is classified as wild green tea. In 2003, Hadong green tea received recognition as a geographical indication system designated by the National Agricultural Products Quality Management Institute. Moreover, it attained the status of National Important Agricultural Heritage No. 6 in 2015.

Notably, Hadong Green Tea stands out by employing "fixation" technology, differentiating itself from other local green teas that predominantly produce low-end varieties. Hadong Green Tea, including Ujeon, Sejak, Jungjak, and Myeongjak, constitutes 95% of the Korea total production of high-end green tea.

In 2018, Hadong Traditional Tea Agriculture was listed on the World Heritage Site (GIAHS) by the Food and Agriculture Organization of the United Nations (FAO). GIAHS, operational since 2002, aims to preserve traditional agricultural knowledge globally. Hadong, Korea, is the fourth tea-related country in Asia recognized by FAO, following Japan(1 site) and China(2 site), acknowledging its 1,200-year-old tradition of tea farming.

Ujeon, the most luxurious tea, is made by harvesting green tea before winter. Hand-picked from the first straw that endures the midwinter cold, Ujeon has a soft and mild taste. Due to its limited production, only a small quantity is available.

Hadong Green Tea Ujeon is carefully selected from large leaves, old leaves, and stems in the natural environment at the foot of Jirisan Mountain. The traditional method involves heating a cast iron pot to 250-350 degrees, cutting the tea at high speed to avoid cooking, and rubbing it in mudstone. The well-empty tea leaves are shaken off and evenly dried on a well-ventilated tray over a gentle fire of around 80 degrees Celsius. Green tea in Jirisan Farmer Village represents high-end handmade green tea, crafted slowly and sincerely in the traditional way.

 Is green tea bitter? The misconception arises from incorrect brewing methods. Green tea should not taste bitter but clean and soft with a subtle hint of umami. Green tea offers health and beauty benefits, including vitamin C and amino acids.

1. Boil water and cool it to 70 to 80 degrees.
If you boil tea with hot water, the astringent taste comes out quickly, leaving the taste of the tea bitter.

2. Put about 2g of tea leaves in about 100CC of water.

3. After 2 to 3 minutes, take out the leaves.
If you ferment leaves for a long time or make them 2-3 times, the bitter taste becomes stronger.

 

TIP1_Rinse the teacup with hot water before making green tea, so you can enjoy a more subtle and soft green tea scent


TIP2_When pouring tea water, if you pour it in two or three times and fill the glass little by little, it will choose the color, scent, and taste

 

 

[How to store it]
The car can deteriorate depending on the effects of temperature, humidity, oxygen, rays, and odor. Keep it away from the air, high temperature, high heat, and humid places.

When opened, tea absorbs a different smell, so it is recommended to put it in a vacuum pack and store it in a freezer at around -5 degrees.
